Easy Roast Beef Man Sandwich- The Red Headed Hostess

This is what I like about this sandwich
1-  My husband loves it
2-  It is so easy to make
3-  It makes great leftovers (i.e. dinner is made for the next night)
4-  My husband is totally fine with that
So for a busy weeknight – I can whip this up and have dinner ready for the next night too!  Love that.
Here are the ingredients
Hoagie rolls
1 lb of deli sliced roast beef
1 red pepper
1 yellow onion
pepperjack cheese
Start by chopping up your pepper and onion
Saute it with a little olive oil, salt and pepper
While that is cooking down, take out your roast beef
And chop it up.  I do this because the texture of the sandwich changes and the ingredients all blend together well
When your pepper and onion is cooked, add your roast beef and cook for about 5 minutes.  Let your roast brown a bit and then scrape up all those good flavors off of your pan
Add about 1/2 cup of pepperjack cheese
And stir until the cheese melts and is like a sauce throughout the roast beef mixture
Then add to the hoagie buns.  Sometimes I pull out some of the bread so there is less bread and more meat.
It depends on what mood I’m in.
Then refrigerate the left overs.  If there are any.

  1. We MUST have this for a Saylor Sunday dinner. It looks delicious. I bet it would also be yummy if diced mushrooms were added just before the veggies are finished and just before the beef is added so that they soak up both flavors.

  4. I am going to try these. Currently I simmer my deli roast beef in Campbell’s French Onion Soup, add peppercini’s and serve on a roll. I am going to add the pepper jack and red pepper too.

    I used french bread rolls (on clearance) and put the meat mixture and a slice a provolone cheese on top…. broiling it to toast and melt the cheese…. Super YUM!
